St. Charles County Food Inspection Scores: Ruma’s Deli, The Shack, Auntie Anne’s, Junction House and more

The St. Charles County Department of Health oversees more than 1,300 food service providers in St. Charles County. (The City of St. Peters conducts its own inspections.) Routine inspections are performed by specialists in the Food Safety Practices Department and are scored by subtracting points from a starting score of 100.

The following acronyms are used in information about violations: PHF (Potentially Hazardous Food), TCS (Time/Temperature Control for Safety), FCS (Food-contact Surface), NFC (Non-food contact surface), RTE (Read to Eat) .

The following scores have been posted in the period 18 to 24 June 2021. Comments in boxes are quoted from test forms.

New Melle

  • Maracas, 4600 Highway Z – score 81

Food safety certified person is not present. Only certified person employed is owner. A food safety certified person must be present when the kitchen is in operation. For correction and prevention, all employees must have completed basic food processor training. All employees must be trained and successfully certified by an ANSI approved Safe Food Handlers trainer. This will happen no later than 90 days.

Employees who eat, drink or use tobacco 2(pts) – food should be consumed outside food preparation in the designated break room. This should be written as a policy and understood by all employees.

Chemical labeled as food surface sanitizer registers over 500 PPM on Quat test strips. Quat sanitizer must be maintained so as not to exceed 400 PPM.

Flies must be eliminated immediately and mitigation must remain in place for the destruction of flies.

No test kit for sanitizer 5(pts) – Test kits should be readily available and used daily.

Leaking plumbing or plumbing in disrepair 5, 2(pts) – Plumbing should be kept in good condition and leaks should be repaired within a reasonable time from the time they occur. Employees must monitor the condition of the sanitary facilities.

Observed grease on the ground at the back of grease storage outside and at the rear waste disposal station. Also observed reddish residual spots on the ground over the parking lot. This grease and stains must be removed within the next 90 days and the wash water must not be discharged onto the floor as it is waste.

Waste container lids missing 2(pts) – The waste container must have a lid.

Damaged floor tiles, holes in walls, missing ceiling tiles 2(pts) – Walls damaged and in need of repair. This damage must be repaired within the next 90 days, including damage to walls and stairwells and damage to walls near the saucer.

Ceiling must be cleaned to remove contamination.

No food may be prepared in the cellar until approved by the department. Continue to protect all the food stored in the basement as it is transported to the upstairs kitchen.
